40th Birthday Cake

This project was an interesting exercise on design. The client approached me for a birthday cake for a 40th birthday, but wanted to include their fiance’s background in cake. No, it was not Chanel bags, sports items or kittens. The birthday lady had moved from S. Korea to Minnesota and finally to NYC and the client wanted to tie that all together. We were faced with the challenge of addressing this design idea. I wanted the design to incorporate a clean but visually sharp graphic style, but not to appear too cluttered. I was able to do this by repeating the airplane, cloud and arrow motif with a limited color scheme. While not completely depicted from this picture, we started with a “start” sign and the South Korean flag and the shape of the peninsula, and then an airplane “flying” to the US. The U.S. was represented by the flag as well as the shape of Minnesota. And the finally a plan to “I Love NY” and the silhouette of NYC. We completed the look with a “40″ topper and some cloud cutouts.

The Very Hungry Caterpillar Cake

Children’s books are a common theme many clients choose for their children’s birthday cakes. This cake was no exception. As a matter of fact, the client had seen this design on another cake and was hoping for a replica. Copying other cakes or components of them are a normal part of being in the cake decorating industry. Of course, at Brooklyn Cake we always strive to make the design or own or take the workmanship to the next level. We were literally working on this cake with the book open to reference and attempt to replicate the amazing paper texture/effect that E. Carle books always have in their illustrations. We custom-mixed individual colors then braided and kneaded them partially together to achieve the marbled effect on each caterpillar segment as well as the butterfly wings. Further looking into the theme, we designed a topper that would match the birthday’s girl, by picking the apple for the number “1″. We even punched a hole into our apple for the holes that appear in the book.

iPhone 4 Cake in White

There are a lot of techies and gadget people out there. An iphone cake would really hit the funny bone of any tech lover or just a plain phone freak. That is exactly what this client did for her friend. We went with the latest version (at that time) of the iphone 4 model in white. Each detail from the background to each app icon was painted and crafted by hand (the google maps app was a task in itself!). Other ideas for these custom celebration cakes would be to make mini cakes, cupcakes or cookies with the app icons on them. For the most simplistic setting, you can get a white cake with an Apple logo or any tech logo of your choice. Ipods/mp3 players and laptops are also popular choices. Why not make it twice as interesting or triple and have two or three sculpted cakes for one jaw-dropping ensemble? Maybe your honoree is more of a social media person. We could create a Facebook or Twitter themed cake for you!

Giraffe Baby Shower Cake

This vivid and modern cake was based on the invitation to a baby shower. The cake resembles the invitations down to the background pattern.A brightly hued giraffe family nestle together on alternating sides. Colorful flowers were placed on the top tier to add balance to the ensemble as well. This is just another example of the careful and detail-oriented custom work we do here at Brooklyn Cake.

This is also a great example of how a baby shower cake doesn’t need to follow the usual conventions of baby themes such as baby shoes, blocks or rattles. A cake such as this is a great way of adding style, simplicity and elegance to a baby-related event. It would work great even as a child’s birthday cake. You could dress up your event further by adding matching cupcakes, sugar cookies, French macarons or cake pops!

Cutting the cake servings size down and adding other dessert options are a great way of increasing variety as well as upping the festiveness of your event. Baseball Cap Grooms Cake

Grooms cakes, while not as standard or traditional as they once were, are now opportunities for brides to surprise their husbands-to-be. Of course, popular stand-by choices are anything sports-related. This cake is no different in that respect. We have certainly done our fair share of sports balls, team logos and jerseys. This Boston Red Sox cap, however, also includes a team pennant flag.

Grooms cakes are also a great way of including something fun, creative and bold without breaking the bank, because the cake doesn’t have to feed every single one of guests as the wedding cake usually does. A modest size of anywhere from 20-40 servings should be reasonable. The grooms cake might offer an opportunity to also offer a more non-traditional cake flavor; for example a peanut butter buttercream, or red velvet cake.

A grooms cakes doesn’t have to be sports-related. Let it be anything that interests your special someone. Some cakes that might interest you are the Diet Coke Cake, the Tomato cake, or the Dog Cake.

Red and Gold Cherry Blossom Cake

This wedding cake has a very different take on cherry blossoms. The red flowers were crafted to look stylistic and more toy-like, with fat red petals. Delicate pink tulle was gathered to create beautiful beds for the bold flowers, adding a special touch to this cake. The cherry blossom pattern itself was piped on and painted gold and metallic pink and disco dust. The cake was finished with a red satin ribbon at the base.

This cake was created for a beautiful Asian wedding dessert ensemble, with pink and red mini wedding cakes and a red, gold and pink macaron tower. Cherry blossoms are a very popular flower for cakes. Circus Tent Birthday Cake

When creating this festive and fun birthday cake for our client, we wanted to achieve a level of dynamism often missing from many circus tent cakes. Both top and bottom tiers of the cake were individually shaped and sculpted to get this effect. Equal attention was paid to our circus seal who is balancing a ball on his nose. For a more colorful and festive array, you can add more circus animals. For more servings, just add additional tiers or we can design a larger tent or perhaps multiple tent cakes.

Create an amazing circus display with this cake and matching circus cupcakes, popcorn bags or boxes, circus animal cookies, animal cracker boxes, circus ball truffles or cake pops.

Storefront Cake

This cake was designed and constructed for a corporate event for a company that runs a chain of pharmacies in Europe. The storefront on the building is a miniature replica of the one in a photo sent by the client. Every minute detail down to the items in the display case and the brick sidewalk were recreated. The building was designed according to small European-style buildings. The doors and glass were made of sugar. The side of the building featured more detailed windows as well as an entrance.

Anemone Flower Wedding Cake

With the heat during the summer, it was a little surprising to see the number of buttercream wedding cakes. However, with air-conditioned environments, it effects the conditions of the buttercream very little. Such was the case for this wedding cake. The bride and groom wanted something very simple using just accents of light blue for their cake. We topped it off with a generous-sized white French Anemone. Each sugar bead was a different shade of pearly blue.

The couple wanted this cake to be mostly about the delicious cake flavors, so we kept the buttercream frosting it’s original color which was a bit on the ivory side. The cake actually consisted of two different frostings. One was an orange buttercream while the other was a caramel buttercream. This wedding cake was coupled with a surprise grooms cake (see Baseball Cap Groom Cake).

Stripped down to just the fondant ribbon and flower would have made a simple, elegant and very classic looking wedding cake.

Sculpted Dog Cake

This friendly little Shih-Tzu was created for a major dog lover, modeled after his favorite lap dog. This cake was created entirely from photos of the dog. Great care was taken to replicate features of the dog, including its coat and colorings, as well as facial features. We decided to keep the board and the message simple and let the cake speak for itself. Inside was a scrumptious and moist pumpkin cake. It was also an amazing surprise for the guest of honor to celebrate his 65th birthday.

Chrysanthemum Flower Birthday Cake

Cake based on original invitation

The design of this birthday cake was based on the invitations, capturing everything from the color scheme to the font. The yellow stripes lend this cake a happy and fun air while the edible flower graphic banner adds festive note. Because the flowers are 2D rather than 3D, this also gives a more modern feel.

The flower banner itself was custom-designed and hand-cut. The design was also versatile enough to use for an adult’s event, such as a birthday or bridal. The flower banner motif could even be used on a wedding cake. We love designing and creating cakes based on invitations as lovely as the one for Ava. Fonts as well as graphics can be replicated to fit your needs.

Air Jordan Retro 5 Sneaker Cake

After presenting the Air Jordan Sneaker Cake on the blog, another client commissioned this cake… obviously a different model from the other Air Jordan Sneaker. This one presented more challenges as this sneaker is stitched together with the more traditional patches and pieces of a sneaker. For the cool grey sneakers, borders can just be traced out onto the fondant. However, in order to get a realistic look for the Retro 5, we really needed to create each individual piece. Templates created purely from images were used to cut out every piece that was being placed together. The finishing touches also lent it a close-t0-real look. Careful study was made so we could pay attention to every detail.

Ten Ladybugs Birthday Cake

This cake was designed loosely-based on the popular children’s book “Ten Ladybugs”. The design was specifically trying to capture a garden-like whimsical feel. It comes complete with critters like butterflies, caterpillars, a dragonfly, snail and bee (not to mention the ladybugs), etc. We used a warm yellow base for all of our colors to vibrantly stand out. Inside was a scrumptious vanilla cake with blueberry confit (old-fashioned jam).

This cake them would also be perfect for a garden birthday cake. When considering a theme, children’s books are often popular as party themes. We will work with you on different design possibilities and usually sketches are submitted to clients for original work.

Modern Flowers Monogram Wedding Cake

While fondant is definitely here to stay, for its versatility and look, we have recently noticed a re-emerging of the popularity of buttercream frosted wedding cakes. Firstly, it is a more economical choice and is easier on the wallet. However, it also does have the advantage of appealing to nostalgia for cakes we remember as children, not to mention that they just look scrumptious (as opposed to fondant covered cakes that do not appeal to taste sensory).

We wanted to post this cake up because it has a modern twist on buttercream cakes. A smoothed surface allowed us to place layers of translucent paper-thin “petals” (edible) to resemble the bride and grooms invitations. The goal was to make them look almost as if they had been painted on; a modern monogram was used as a focal point for the cake. This buttercream is completely devoid of any homestyle texturing but also lacks the traditional bakery piping, or any 3-dimensional flower whether buttercream or gumpaste. The cake is very simple and yet also proves to be very beautiful and stands out a truly unique wedding cake.

Sorting Hat Harry Potter Cake

Ever since the Harry Potter exhibit has opened up at the Discovery Museum at Times Square, it seems that I’ve been getting plenty of inquiries for Harry Potter-themed birthday cakes… with the deliveries inevitably ending up at the Discovery Museum’s downstairs party room (I love the irony of the Cake Boss cafe being on the same level). The client had inquired about my previous Harry Potter book cake, but wanted something a little different, perhaps a combined Sorting Hat cake. I wanted to add different elements to this cake besides, coins or the typical Gryffendor scarf, so we opted for the potion bottles. We also added the touch of the ink bottle with the feather quilled pen, which was made out of wafer paper! Each bottle is actually an individual cake as well.

Kids Pink Mod Monkey Birthday Cake II

The mod monkey party supply line being ever so popular, we get asked frequently about cakes based on the line. The client wanted to add light pink to the color scheme while, keeping the brown limited.
As requested, we created a little sculpted chocolate monkey holding the number “1″ for baby’s first. The circles were not alternating between while and light pink on a vivid hot pink background for the top tier and a pale pink background with neon green stripes for the bottom tier. The flowers were also more of a design element with this cake. The cake base is covered with pink and green flowers and hot pink flowers were placed near the base.

We wanted to include this cake in our gallery as a sample of a different design from the original mod monkey cake. We can create a unique and original design for any theme. Candy Land Baby Shower Cake

This cake was created to match a candy land baby shower theme. Complete with yummy lollipops and cotton candy sculpted out of colorful fondant and brushed with edible lacquer and sparkle dust. Sugar pearls line the satin and grosgrain ribbons. This cake also features a “fake” cupcake as a topper. The sculpted mini cake has shaped fondant as a baking cup, topped with a swirl and a molded cherry. The top tier features adorable onesie cutouts of different designs and colors. The bold colors, brushed with pearl dust are sure to make this cake eye candy itself. This cake was used as a centerpiece for a candy dessert table, filled with all kinds of bold purples and pinks.

Spa Diva Leopard Print Cake

The Spa Diva Leopard Print cake has everything a pampered diva would need. The construction of the completely edible diva and sofa, shows the fine level of our sugar craftsmanship. Our diva is sprawled on an original-designed chaise longue sofa with a matching leopard print cushion. The bathrobe clad lady is lounging with towel wrapped hair and a green beauty masque to boot. We even gave her pink nail polish on her fingers and toes. The sofa itself is lined with edible pearls and stands raised on its own legs from the top tier. Our leopard print was inspired by the actual pattern of leopards, with the pattern diminishing towards the bottom. Our beautiful pink bow was also dusted with edible glitter dust.

This design or a variation is perfect for a diva’s birthday or as a bridal shower cake. It would be also be a complement for any spa-type party. This is also a great spinoff for any kind of diva cake. It doesn’t just have to be handbags, jewelry or shoes!

We get asked often to create original kids’ birthday cakes based on Monkey themes. Here is another really fun cake we created based on the ever-popular mod monkey party supplies. The mod monkey party supply line offers a fun assortment in design, with colorful circles, flowers and stripes. We incorporated the circles straight onto our cake, repeating the design on the chocolate number “2″. A vanilla ribbon tops this cake and a cute fondant replica of the mod monkey cleanly sits on the front of the top tier.

Dogwood Cherry Blossoms Cake

This tiered cake visits the subject of dogwoods and cherry blossoms with a slight Asian twist. The hexagonal shape of each tier lends it a unique and modern look. While the hand-painted branches reminds us of Asian watercolors, the fondant ribbon with its pearly sheen resembles silk. Further subtle detail is added with red beading along the ribbon as well as red piped “berries”, each brushed with edible red glitter.

This cake makes a beautiful display for any Spring wedding. Colors and flowers are completely customizable. Make this wedding cake stand out even more by selecting a green, pink, yellow or blue base color. Sugar butterflies, birds and other critters can be added to give it a more garden-like feel.

Harry Potter Book Cake

This was created for a young fan of the Harry Potter books. It comes complete with edible Gringotts’ bank gold coins, a Gryffendor scarf, a golden snitch (made out of yummy rice crispies) and a sugar replica of Harry’s glasses with candy lenses. What more could a kid want? The book itself was made of two different types of cake. The cake board was designed to look like a wooden desk.

This design could also include Harry Potter’s wand or any other item featured in the series. To add more servings, just add additional book cakes stacked underneath.

Fashion Design Cake

This cake was custom-made for a girls’ fashion design birthday party. We have elements that not only pertain to fashion, but the designing and sewing process. No detail was left out–from the sugar spools of thread to the sugar buttons, the stitched ribbon to the fondant tomato pin cushion and the measuring tape ribbon. Edible “fabric” flowers and the rock star name sign add that special touch to make this cake stand out.

This design is a terrific alternative to the sculpted dress cakes which can require more planning and a much higher cost. Also, all the different elements make this an especially fun and festive cake for a kid’s birthday party.

This cake as shown serves 30-35.

Sock Monkey Birthday Cake

Sock Monkeys are classic toys that have been making an amazing comeback in popularity in the last few years, which makes it a prime theme for kids’ birthdays and baby showers. The sock monkey was paired with a bright red and teal argyle pattern for Drake’s birthday cake. The edible toppers and signs make this cake the ultimate happy birthday cake! The sock monkey himself fashioned in way to give him floppy and whimsical posturing.

When thinking of the perfect birthday cake, color scheme can make a huge impact on the final design. The brightness and vividness of the red and teal definitely gave the spirit of this cake a real “pick-me-up” and helps it stand out from other cakes. Special attention was paid to detail work like the piped stitching which can have impact on the final presentation.

Here, brown and white were chosen for a fall palette instead of the usual orange, red and gold. Leaves are often chosen for an autumn theme with wedding cakes, but here we chose a design of branches and berries/seeds, a more uncommon, but equally autumn-like imagery. As leaves begin to fall, we often see acorns and other tree “nuts” appearing and falling. Fall also marks the first buddings of winter berries. Why not use these common icons for your Fall wedding cakes. This design can also be adjusted to different color schemes as well as other iconic imagery. This wedding cake could also be used a for a very woodsy rustic-themed wedding, while lending a very modern touch with the stripes.

This cake as is, serves approximately 60 and goes for $7/slice, plus the cost of any decoration or gumpaste flowers. Additional tiers can be added for more servings.

Using the combination of clean unadorned fondant, some ribbon and beautiful gumpaste flowers, you can create virtually countless looks and design. It really all depends on the arrangement. The pictured wedding cake takes on a more classic arrangement, but you add more flowers or use less. Other popular arrangements are cascading flowers or having one large bouquet on top. A more modern striking approach would be to include the stems of the calla lilies, and bind the flowers together in a ribbon as in a bridal bouquet and either lay it right on top or have it leaning diagonally across the front of the wedding cake.

This sugar stiletto and cake was designed and made for a very special birthday celebration. The stiletto pump was recreated after pink suede Louboutins that the birthday girl would be donning. The edible sugar pearl jewelry (each pearl was made by hand) give this ensemble an extra touch of luxury. The plain box was scrapped for this funky zebra design. Special attention was paid to replicate even Louboutin’s gold logo and the original shoe’s suede texture.

This ensemble is also perfect for a bridal shower or any special occasion for that diva or fashionista. We can also recreate any other stiletto you have in mind. You can opt for a strappy stiletto or a pump-style as pictured here. Add edible sequins or glitter for an extra touch of bling!
